Guest Speaker:
Jeff Leach Founder, Paleobiotics Lab
Jeff Leach is a science writer, anthropologist, and health advocate. Jeff is the founder of the Paleobiotics Lab, an independent research group exploring the evolution of diet and nutrition and its possible relevance to understanding modern health and well-being among humans. Though still pursuing his PhD, Jeff has been actively conducting research for over 17 years and has published over 50 scientific peer review articles and abstracts, published a number of book chapters, coauthored several books (in press), delivered over 150 papers at national and international meetings, organized symposia and conferences at the national level, and was elected “Anthropology Chair” to the Texas Academy of Sciences. He is the recipient of a number of research grants and a member of a number of professional societies and lectures to professional and general audiences all over the world. He currently serves in an advisory and consulting capacity to a number of companies and agencies in the US and internationally. He has appeared on the Discovery Channel, Discovery Health Channel, the BBC and others.
His current research includes evolution of diet and health in the American Southwest, northern Mexico, and sub Saharan Africa. His research in the American Southwest includes an evolutionary perspective on type 2 diabetes among central Arizona's Pima Indians – with specific interest in the evolution of insulin resistance.
Jeff was recently tapped by the World Health Organization to further develop his theory for reducing human exposure to food borne pathogens in the global population by reintroducing certain dietary fiber sources in human diet – a concept he first introduced in an Op-ed piece published in the San Francisco Chronicle amid the recent E. coli outbreaks in the U.S.
Jeff is also the Co-Founder of World’s Healthiest Pizza with business partner Randy Crochet in New Orleans.
